ABOUT YIRGACHEFFE GEDEB CHELBESSA WASHED

This washed lot originates from Chelbessa, in the Gedeb woreda of Ethiopia's Gedeo Zone. This coffee is produced by a network of smallholder farmers cultivating indigenous Ethiopian heirloom varieties at high elevations, where cool temperatures and extended cherry maturation contribute to increased sugar development and enhanced cup complexity. Only fully ripe cherries are selectively hand-harvested before being delivered to the washing station. Upon reception, cherries undergo flotation to remove low-density fruit and foreign material prior to depulping. The parchment is then fermented under controlled conditions to facilitate mucilage degradation before being thoroughly washed with clean water. Following washing, the coffee is dried on raised African beds for approximately 10–14 days, during which it is regularly turned to promote uniform moisture reduction and protect against over-fermentation or physical defects. Drying continues until the coffee reaches stable export moisture content. Chelbessa's combination of high elevation, well-drained volcanic soils, abundant rainfall, and moderate temperatures creates an ideal environment for producing coffees with exceptional clarity, pronounced acidity, and layered aromatic complexity. The washing station's rigorous cherry selection and processing protocols further contribute to cup consistency and transparency of origin.
